Some Useful Information on Steam Table Pans:
Sizes: A standard full size pan is made to fit an opening of 12″ x 20″ (ignoring fractions). Half size, quarter size, and all other available sizes relate to one standard 12″ x 20 opening.
Depth: Most all sizes of pans come in 2½”, 4″, and 6″ depths. All steam tables will take up to 6″ deep pans.
Arrangements for Pan Combinations:
The one-fourth, one-sixth, and one-ninth sizes can be interchanged within a 12″ x 20″ opening with the use of a special adapter bar. The opening must be exactly 12″ x 20″ or the adapter bar will not fit
